What's the difference between yogurt you find in the stores and fresh, homemade yogurt? When it comes to many brands, the difference can be summed up in three words: active bacteria cultures. For healthy digestion and immune systems, we need certain kinds of friendly bacteria, and those active cultures should be one of yogurt's many benefits (along with having a high calcium content and a nice dose of protein). The only problem is that many brands of yogurt no longer contain live active cultures. In addition, they're often full of additives, gelatins, artificial flavors and lots and lots of sugar — in other words a bunch of questionable junk you don't need. You can hunt through the dairy section and read the labels to find the yogurt brands that contain live active cultures. Or you can do something even better — make your own yogurt at home.

Homemade yogurt is easy, especially if you use a yogurt maker. You just need milk (organic milk is best, of course), powered milk if you want to make it thicker, and some "starter" — live cultures that can be bought at a health food store, or some yogurt containing live cultures (check the date on the label for the freshest batch at the store — and remember, this may be the last time you ever have to buy yogurt!). If you eat yogurt frequently (and you should — out of all dairy products it's one of the best for you), a yogurt machine may pay for itself in two or three months. If your whole family eats yogurt, the maker will probably pay for itself in matter of weeks.

And let's not forget something very important: flavor. When it comes to just about any type of food, fresher is always better, and yogurt is no exception. There's no comparison in taste between absolutely fresh, creamy, living yogurt and something out of a carton that's full of preservatives and has been sitting around for a few weeks. If you've been eating just any yogurt you happen to grab off the supermarket shelf, then you owe it to yourself to try yogurt that's fresh and natural. You may never buy prepackaged yogurt ever again!
