Sweet Potatoes

I yam what I yam!
Sweet potatoes (often referred to as yams) are a Thanksgiving staple, but considering their nutritional value, they should be eaten far more frequently than once a year. You can tell from their vibrant orange hue that they're loaded with beta-carotene (23 times more beta carotene, in fact, than broccoli). Sweet potatoes also contain a wealth of other vitamins and minerals, including B6 and potassium. They're also a rare, almost fat-free source of vitamin E, and if you eat them with the skin on, you get an extra-added dose of both beta-carotene and fiber. One medium sweet-potato has but 117 calories - of course, that's without the brown sugar, butter and marshmallows of the traditional Thanksgiving casserole! In fact, why don't you consider breaking tradition this year and do something a little different with your sweet potatoes - this long list of recipes will convince you of the humble root's versatility. In fact, really break with tradition and serve up sweet potatoes all year long! Why save this delicious vegetable for just one meal a year?
